Pesto Grilled Cheese, Avo & Spinach Sandwiches on Rye

Ingredients

  • 1 cup raw baby spinach
  • 1 large avocado, sliced
  • 4 slices of rye bread
  • 1 cup / 8 oz. gouda or brie cheese
  • 3/4 cup / 6 oz. goat or feta cheese
  • 1/3 cup pesto sauce

Directions

Add layers of gouda or brie cheese, pesto, avocado, spinach, and goat or feta cheese on top of bread, topping with another slice of bread. Place in a panini press and serve warm. You can also lightly coat the outside of the bread in mayonnaise and grill each side before serving.
