Vegetarian Avocado Buddha Bowl

Ingredients

  • 2 cups of cooked quinoa or brown rice
  • 2 cups raw baby spinach
  • 1 cup roasted chickpeas 
  • 1 avocado, thinly sliced
  • ¼ cup sunflower or flax seeds
  • 1 cup cherry tomatoes, halved

Dressing

  • 2 Tbsp. sesame seed oil
  • 1 Tbsp. lemon juice
  • Salt and pepper to taste

Directions

Whisk together sesame seed oil and lemon juice. Season as desired with salt and pepper. Set aside. In deeper individual serving bowls, add a scoop of quinoa or brown rice and layer of baby spinach. Add chickpeas, tomatoes, avocado slices, and sunflower or flax seeds and then drizzle with dressing. Serve immediately.
