Ingredients
- 4 slices of rye or whole grain bread
- 1 avocado, sliced
- 4 slices mozzarella cheese
- 1 cup baby spinach, de-stemmed
- 1/2 cup feta cheese, crumbled
- 1/3 cup pesto sauce
Pesto Sauce
- 1 cup fresh basil leaves, de-stemmed
- 1 Tbsp. pine nuts or walnuts
- 1 large clove garlic
- 1/4 cup extra-virgin olive oil
- 1/4 cup freshly grated parmesan cheese
Sauce Directions
Combine basil, pine nuts and garlic in a blender or food processor and blend until very finely minced. With the machine running, slowly add the oil and process until the mixture is smooth. Add the cheese and process very briefly, to combine ingredients. Set aside or store in refrigerator until ready for use.
Sandwich Directions
On two slices of bread, layer on spinach, mozzarella, avocado slices, pesto sauce, and feta cheese crumbles. Top with another slice of bread and then either grill each side for several minutes or use a panini press until cheese is melted. Serve warm.
