Stuffed Avocado Halves

Ingredients

  • 1 avocado, seeded, halved

  • 2 Tbsp. pomegranate seeds

  • ¼ cup feta cheese

  • ¼ cup arugula leaves 

  • 3-4 cherry tomatoes, halved 

  • 1 Tbsp. olive oil

  • 2 tsp. lemon juice

Instructions

  1. Mix lemon juice and olive oil together. 

  2. Add arugula, feta, cherry tomatoes, and pomegranate seeds into a bowl and toss lightly with the dressing. 

  3. Place avocado on plate or serving tray cut side up. 

  4. Spoon mixture on top of avocado halves and serve immediately.
